The historically significant Cavallino Inn in the center of the former fiefdom of San Candido has been in the Küh(e)bacher family for generations. The roots of this old farming family extend back to the first documented reference to a farmstead “ob Toblach der da haizet Chuepach” in the year 1316. The loan of the family coat of arms to Georg Kiepacher and his descendants in 1693 brought with it the outright ownership of the lands of the former Schwaighof family. With the purchase of the “White Horse Tavern” for 5,588 florins in 1759, Johann Kiepacher from the San Candido Tötenhof laid the foundation for a significant agricultural and gastronomic enterprise in the Alta Pusteria Valley that typifies the history of the Alta Pusteria Valley’s hospitality trade and its development since the 17th century. At that time, the tavern consisted of a brick pub and included parts of the Ruess baker’s dwelling, with fodder storage immediately below that, plus a garden. Due to its proximity to the long-established Gaststätte zum Bären (Bear Pub) already on the square, the Rösslwirt (Horse Inn) became known as the “Neuwirt” (new inn) – a name that the place still bears today. The inn owes its origin and growth to its location on an important transit route that existed into the 19th century. When the Alta Pusteria Valley became linked to the eastern alpine railway system in 1871, visitors to the area created a new source of revenue, which soon became the main source of income.

As the circumstances and needs of the times changed, extensive renovations and additions designed by renowned architects were undertaken to enhance the inn. Today the hotel presents itself as a modern 4-star tourism establishment with a traditional business culture.
